Paleo Chocolate Cherry Coconut Bark

Since dry cherries are used, you can essentially make this bark with ANY dried fruit. I have done it with dried oranges, pineapple and apricots so far and they are all delicious. Add as much fruit and chocolate that you want to the recipe.

Ingredients
- 1 cup coconut oil, softened
- 1/2 tsp pure vanilla extract
- 1/8 tsp pure almond extract
- 2 Tbsp chopped, dried unsweetened cherries (or as much as you like)
- 1 Tbsp mini chocolate chips or dark chocolate shavings (or as much as you like)
- pinch sea salt
- for color, few drops of beet juice
- You can also use different flavored extracts to help flavor the coconut oil (I use 1-2 tsp cherry extract in this recipe to help flavor)

Step 1
1. Place all of the ingredients in a medium bowl and mix to combine.
2. Pour the mixture onto a parchment lined baking sheet and spread evenly with a spoon.
3. Freeze until hard. Break into pieces. Store in an airtight container and freeze for up to 1 month.
