Grandma Townsend's Big Soft Sugar Cookies

Ingredients

  • 2 cups sifted all purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 butter-flavored shortening
  • 1/4 butter (or additional butter-flavored shortening)
  • 1 cup granulated sugar
  • 1 egg, separated
  • 1/2 cup buttermilk
  • 1/2 tsp. vanilla extract
  • additional sugar for coating
  • red hots

Preparation

Step 1

Preheat oven to 375°F.

Sift together flour, baking soda, and salt in a small bowl. Set aside.

Cream together butter and shortening until fluffy and creamy. Add sugar slowly and mix until light and fluffy. Add egg yolk and mix until blended.

Alternatively, add flour mixture and buttermilk, mixing between additions. Add vanilla extract.

Fold in stiffly beaten egg white.

Drop by heaping tablespoons, 3 inches apart, onto large cookie sheet. Flatten slightly. Bake at 375°C for 13-14 min. Makes 18 3-in cookies.
