Strawberry Butter II
- 8 tablespoons of unsalted butter, softened
- 1/3 -1/2 cup mashed strawberries
- pinch of salt
- sugar, optional, if you want a sweeter butter

In a large mixing bowl beat the butter with a hand mixer on low until creamy and fluffy. Beat in strawberries and salt. Beat in sugar to taste if desired. Keep refrigerated.
Substitute strawberry jam for the fresh strawberries, start with 2 tablespoons, taste and add more if desired.
