SHRIMP - The Chew's Shrimp and Grits

Ingredients

  • 1/2 large Vidalia Onion
  • 1/4 Red Pepper
  • 1 tbsp. of Butter
  • 2 cloves Garlic
  • 1/3 cup Old Fashioned Grits
  • 1/2 cup Sharp Cheddar Cheese
  • 1/4 cup Asiago Cheese
  • 1/3 pound Shrimp (peeled and deveined)
  • Hot Sauce and parsley for garnish
  • Salt and Pepper to taste

Preparation

Step 1

* Dice the onion and pepper and sauté in butter until they begin to soften. Add the garlic and continue cooking over medium heat a few minutes longer. Add 1 2/3 cups of water and the grits. Simmer covered for 20 minutes.
* Add the cheeses and the shrimp, pushing the shrimp down in the pan. Cook until the shrimp turns pink, but watch so that they don't get rubbery, about 5 to 6 minutes. Garnish with the Crystal Hot Sauce and parsley.
