Spinach Salad

  • Salad Dressing
  • 1 clove garlic, minced
  • 1/4 cup wine vinegar
  • 2 T. white wine
  • 2 tsp soy sauce
  • 1 tsp Worcestershire Sauce
  • 1 tsp sugar
  • 1 tsp dry mustard
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2/3 cup vegetable oil
  • Salad
  • 1 lb fresh spinach
  • 1/2 lb bacon
  • 1/4 lb mushrooms, sliced
  • 2 hard-cooked eggs

Preparation

Step 1

In a cruet or jar with lid, mix all ingredients for salad dressing and shake until slightly thickened and thoroughly blended.

For the salad, wash and trim spinach. Spin dry in a salad spinner.

Cook bacon until crisp; drain well on paper towels.

Place spinach in a large salad bowl. Add the sliced mushrooms and toss gently with salad dressing.

Top salad with chopped hard-cooked egg and crumbled bacon.
