Chicken Hash Brown Casserole

Ingredients

  • 4 c shredded rotisserie chicken
  • 1 (20 oz) package frozen O'Brien potatoes, thawed
  • 2 (10.5 oz) cans cream of chicken soup
  • 1 c chopped yellow onion
  • 1 (8 oz) package shredded Cheddar cheese
  • 1 (8-oz) package taco sauce (like Frontera Texas Original Taco Skillet sauce)
  • 1 (8 oz) container sour cream
  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • Toppings: shredded lettuce, chopped tomatoes

Preparation

Step 1

Preheat oven to 350º. Spray a 3-quart baking dish with cooking spray.

In a large bowl, stir together chicken, potatoes, soup, onion, cheese, taco sauce, sour cream, salt and pepper.

Pour into prepared pan.

Bake until hot and bubbly, 40 to 45 minutes. Let stand for 10 minutes before serving.

Top with lettuce and tomato as desired.
