Thai Chicken Satay with Spicy Peanut Sauce

Ingredients

  • Marinade and Chicken
  • 3 TBSP lime juice
  • 3 TBSP canola oil
  • 2 tsp. soy sauce
  • 1 tsp. fish sauce
  • 1/2 crushed red pepper
  • 1 pound chicken tenders
  • Peanut sauce
  • 2 TBSP smooth natural peanut butter
  • 2 TBSP lite coconut milk
  • 1 TBSP lime juice
  • 2 tsp soy sauce
  • 1 tsp brown sugar
  • 1/2 tsp crushed red pepper

Preparation

Step 1

1. To marinate chicken-
Whisk lime juice, oil, soy sauce, fish sauce and crushed red pepper in a shallow baking dish until combined; add chicken and turn to coat. Let marinate in the refriferator for at least 15 minutes.
2. Preheat grill to high.
3. To prepare peanut sauce-
Whisk peanut butter, coconut milk, lime juice, soy sauce, brown sugar and red pepper flakes in a small bowl until smooth.
4. To grill chicken and serve-
Thread each chicken tender onto a wooden skewer. Grill the chicken skewers until cooked through and no longer pink in the middle- about 3 minutes per side. Serve warm or chilled with the peanut sauce for dipping.
