Hot Buttered Blueberry Sauce

If you use cornstarch to thicken the sauce, it will be a clear, glossy sauce. Flour will result in an opaque appearance. Store any unused sauce in a covered container, refrigerated.

Ingredients

  • 1 1/2 c. fresh or frozen blueberries whole, unsweeterned
  • 1/3 c.sugar
  • 2 tbsp. flour or 1 tbsp. cornstarch
  • 1/4 tsp. salt
  • 1 tbsp. lemon juice
  • 1 c. hot water
  • 2 tbsp. butter

Preparation

Step 1

Measure blueberries and have ready, frozen berries need not be thawed. In saucepan, combine the sugar with the cornstarch or flour and salt. Add the lemon juice and water, stir until well blended. Then bring to a boil over high heat, whisking vigorously. Cool until thickened, about 3 min. Stir in the berries and butter. Serve warm or cooled.
