Ingredients
- 1 can (7 oz.) tuna, drained and broken into chunks
- 1/4 c. chopped celery
- 2 tbsp. raisins
- 2 tbsp. sliced green onion
- 1/4 c. mayonnaise
- 2 tsp. lemon juice
- 1/4 to 1/2 tsp. curry powder
- 1/4 tsp. salt
- 2 English muffins, split and lightly buttered
- 4 slices Cheddar or American cheese
- celery leaves for garnish
Preparation
Step 1
Combine tuna, celery, raisins and green onion in a small bowl. In a measuring cup, stir together mayonnaise, lemon juice, curry and salt. Fold into tuna mixture. Toast English muffins. Immediately spoon tuna mixture on muffins. Top each sandwich with a cheese slice. Broil for 2 to 3 min. or until cheese melts. Serve hot, garnished with celery leaves.
