Ingredients

  • Gazpacho Cream
  • 1/2 cup diced tomato
  • 1/2 cup diced cucumber (seeds removed)
  • 1/2 cup diced red pepper
  • 2 tablespoons minced red onion
  • 1 minced garlic clove
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 cup sour cream
  • 1/4 cup sour dough bread (torn into pieces with crust removed)
  • 1/2 teaspoon cayenne pepper
  • 1 baguette
  • 8 ounces Manchego cheese
  • 1/4 pound Serrano ham

Preparation

Step 1

First make the cream in a food processor by blending together all of the ingredients for the gazpacho cream. Slice up the baguette into 1/4 inch rounds and toast in the oven at 400 degrees. Place a thin slice of Manchego cheese over each piece and pop back in the oven for another 2 minutes to melt the cheese. Then add the dollop of gazpacho crew and a thin slice of Serrano ham.
