Ingredients
- 1/3 c butter softened
- 3 oz cream cheese softened
- 3/4 c sugar
- 1 egg yolk
- 2 tsp almond extract
- 1 1/2 c flour
- 2 tsp baking powder
- 1/2 tsp salt
- 5 c flaked coconut (1 bag)
- coarse colored sugar for decorating
Preparation
Step 1
preheat oven 350'
In a small bowl mix flour, baking powder and salt. Set aside.
In large bowl, cream butter, cream cheese and sugar until fluffy. Beat in yolk and extract. Slowly add flour mixture. Slowly add 3 c of the coconut (save the rest).
Cover and refrigerate 30 min-1 hr until dough is easy to roll into 1" balls.
Roll balls then roll them in the remaining coconut to coat the outside. Place on cookie sheet about 2" apart. Sprinkle with coarse colored sugar for a more festive appearance.
Bake 350' 12 minutes until lightly browned. Immediately place a chocolate kiss in the center of the cookie and press it down. Let cool on the cookie sheet.
