Wild Rice and Chicken Casserole

Ingredients

  • 4 whole chicken breasts (steamed)
  • 1 package long grain & wild rice mix
  • 1 cup cream of chicken soup
  • 1 cup water chestnuts, drained & sliced
  • 1/4 cup margarine or butter
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 medium onion, chopped
  • 3/4 cup mayonnaise

Preparation

Step 1

Preheat oven to 350 degrees.

Cook chicken, cut into bite-size pieces. Prepare rice as directed.

Saute onion, celery, and green pepper in margarine or butter.

Combine chicken, prepared rice, sauteed vegetables, water chestnuts, mayonnaise, and soup. Place in 8 x 10 baking dish.

Bake uncovered for 30 minutes, until bubbly.
