Ingredients
- Crust:
- 3/4 cup butter, room temperature (1 1/2 cubes)
- 1/2 cup brown sugar, packed
- 1 1/2 cup flour
- 1 cup chopped nuts
- Filling:
- 1 small box lemon flavored gelatin
- 1 cup hot water
- 3/4 cup sugar
- 8 oz cream cheese
- 1 cup whipping cream
- Topping:
- 2 small boxes or 1 large box strawberry flavored gelatin
- 3 cups hot water
- fresh strawberries, chopped, optional
Preparation
Step 1
Preheat oven to 375 degrees F. Butter 9×13 pan. Blend butter, brown sugar, flour and nuts together well; press into prepared pan. Bake 10 minutes or until golden brown. Set aside to cool.
Dissolve gelatin in hot water; let cool. Cream sugar and cream cheese together. Whip whipping cream and add to cheese mixture; blend into cooled gelatin mixture. Pour over cooled crust and chill until firm.
Dissolve gelatin in hot water; let cool; add fruit if using; pour on top of chilled cheese mixture and chill until firm.
Variations:
Use peach flavored gelatin and peaches for topping
Use raspberry gelatin and raspberries for topping
Use berry gelatin and a mixture of berries for topping
Use lime gelatin for filling and topping
