Ingredients
- 1/2 cup Swanson Fructose
- 2 large eggs
- 2 egg whites
- 1 tablespoon Swanson Coconut Oil
- 3 tablespoons Swanson Organic Cocoa
- 1/2 cup unbleached flour
- 1 can (15 ounces) Eden Foods Black Beans
- 1/2 teaspoon baking powder1/2 teaspoon baking soda
- 1/8 teaspoon Swanson Himalayan Crystal Salt
- 1 teaspoon vanilla
- 1 cup Swanson Organic Walnuts, chopped
- 1 large ripe banana, mashed

Preparation
Step 1
Place the rinsed black beans in a food processor and break them down. Pour the puree into a bowl and add the fructose, eggs, coconut oil, vanilla and ripe banana. Mix well. Sift all the dry ingredients together and add to the mixture. You can add the walnuts at this time or save them to sprinkle on the top of the batter before baking. Pour mixture into a greased 9x13 pan. Bake at 350° for approximately 40 minutes or until an inserted toothpick comes out clean.
