Mandarin Chicken

This is a Paleo recipe. You can use the oil of your choice and soy sauce if you are not Paleo.

Ingredients

  • Sauce: 1/2 cup frozen orange juice concentrate, thawed
  • zest of 1 orange
  • 2 Tbsp liquid aminos OR soy sauce
  • 1 Tbsp olive oil
  • 2 garlic cloves, minced
  • 1 Tbsp raw honey
  • 1/4 tsp red chili pepper flakes
  • Chicken: 1 Tbsp coconut oil, OR oil of your choice
  • 2 lbs boneless, skinless chicken thighs, cut into bite size pieces
  • sea salt and fresh ground pepper to taste
  • 1/2 tsp granulated onion
  • Diced green onions sesame seeds (toppings for finished chicken)

Preparation

Step 1

1. Place the sauce ingredients in a small bowl, mix, and set aside.

2. Heat the oil in a large skillet over medium-high heat.

3. Place the chicken in a medium bowl and season lightly with salt, pepper, and the granulated onion. Add the chicken to the hot skillet. Let it brown on all sides, stirring only occasionally, until almost done, about 5 minutes.

4. Add the sauce to the skillet, stirring up the yummy bits from the bottom of the pan as it bubbles. Turn the heat to medium and simmer the sauce, uncovered, about 5 more minutes, or until the sauce has thickened a bit and really sticks to the chicken. Serve hot.
