Ingredients

  • 2 cups white vinegar
  • 3 cups sugar
  • Bring to a boil and set off heat.
  • 8 cups finely sliced squash
  • 2/3 cup salt
  • 2 quarts water
  • Let soak 1 hour. Drain. Don't rinse.
  • 2 cups finely sliced bell pepper
  • 2 cups finely sliced onion
  • 1 small jar pimento ( chopped)
  • 2 TBSP celery seed
  • 2 TBSP mustard seed
  • Put all the above igredients in vinegar. Bring to a boil then turn to a simmer while filling jars.
  • HOT PEPPERS ARE OPTIONAL
  • Seal jars.
