Ingredients

  • Cranberry Vinaigrette
  • 1 * 1 cup fresh or frozen cranberries
  • 1/3 * 1/3 cup sugar
  • 1/4 * 1/4 cup finely minced onion
  • 1 * 1 teaspoon finely chopped rosemary
  • 1 * 1 teaspoon Dijon mustard
  • 5 * 5 tablespoons vegetable oil (or extra virgin soya oil)
  • * salt and pepper
  • Salad
  • 2 * 2 Cortland apples (or MacIntosh)
  • 1/2 * 1/2 head fennel
  • 2 * 2 tablespoons vegetable oil
  • * Traviso radicchio, for presentation

Preparation

Step 1

Directions
Cranberry Vinaigrette

1. For cranberry vinaigrette, simmer cranberries, sugar, onion and rosemary with ½ cup water until cranberries “pop”, about 20 minutes. Remove from heat and cool to room temperature. Whisk in Dijon mustard, then slowly whisk in oil. Season to taste.

Salad

1. Preheat grill on high heat. Core apples and cut into ¼-inch slices (do not peel.) Cut fennel into slices of the same thickness (leave core in) and toss apples and fennel in oil. Grill apples and fennel until lightly charred on both sides, but still crunchy, about 4 minutes in total.
2. To serve, arrange radicchio leaves on a platter and arrange apples and fennel over. Spoon cranberry vinaigrette over and serve.
