Wonderful Butterfinger cookies! I got this from the Dallas Morning News Cookie Contest in 2003. This was second place in the family favorites division. I’ve only made them twice because they have 122 calories per cookie. I hate it when they give you that information, don’t you?

Ingredients

  • 1/2 C. butter, softened
  • 3/4 C. sugar
  • 2/3 C. brown sugar
  • 2 egg whites
  • 1 1/4 C. chunky peanut butter
  • 2 tsp vanilla extract
  • 1 C. flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 5 (2.1oz) Butterfinger candy bars, chopped

Preparation

Step 1

Cream butter and sugars. Add egg whites and beat well. Blend in peanut butter and vanilla. In a separate bowl, combine flour, baking soda and salt. Add to creamed mixture and mix well. Stir in candy bars. Refrigerate 1 hour.

Preheat oven to 350 degrees F. Shape into 1 ½ in balls and place 2 in apart on greased cookie sheets. Bank for 10 to 12 minutes or until light golden brown. Do not overbake. Cool on wire racks. Makes 4 dozen.
