Lemon Chicken Salad

Ingredients

  • 1 1@ lb. boneless skinless chicken breasts
  • 1 can artichoke hearts in water
  • 2 cups slivered carrots
  • 2 tea. whole grain Dijon mustard
  • 1-2 tea. oregano
  • 1-2 tea. garlic
  • 3/4 cups lemon juice
  • 1/3 cup olive oil
  • 1 1/2 cup small shaped pasta
  • salt and pepper
  • DRESSING
  • 1/2 cup lemon juice
  • 1/3 cup olive oil
  • 2 rounded tea. Dijon mustard to taste
  • Oregano
  • Garlic
  • salt and pepper

Preparation

Step 1

Steam chicken with lemon juice (don't overcook). St3am carrots. Cook pasta al dente. Slice artichokes. Mix chicken, carrots, pasta and heats. Toss with dressing.
