Ingredients
- 1 1@ lb. boneless skinless chicken breasts
- 1 can artichoke hearts in water
- 2 cups slivered carrots
- 2 tea. whole grain Dijon mustard
- 1-2 tea. oregano
- 1-2 tea. garlic
- 3/4 cups lemon juice
- 1/3 cup olive oil
- 1 1/2 cup small shaped pasta
- salt and pepper
- DRESSING
- 1/2 cup lemon juice
- 1/3 cup olive oil
- 2 rounded tea. Dijon mustard to taste
- Oregano
- Garlic
- salt and pepper
Preparation
Step 1
Steam chicken with lemon juice (don't overcook). St3am carrots. Cook pasta al dente. Slice artichokes. Mix chicken, carrots, pasta and heats. Toss with dressing.
