Ingredients
- 1 1/4 /# hamburger (90% lean)
- 1 c. finly crushed tortilla chips or corn chips
- 1 envelope onion soup mix (1/2 of a 2 oz pkg.)
- 3/4 c. bottled taco sauce
- 2 eggs lightly beaten, divided
- 1 8.8oz pouch cooked spanish style rice (Uncle Bens Ready Rice)
- 1 - 15.5oz can golden hominy, rinsed and drained
- 1 - 14.4oz can diced tomatoes with green chilies, drained
- 1 c. pepper jack cheese (shredded) 4 oz
- 1 medium, fresh anahaim pepper (seeded and chopped) 1/2 cup.
- 1 medium jalapano (seeded and sliced)
- 1/2 c. fresh cilantro (chopped)
- Tortilla or corn chips, jalapeno pepper and or fresh cilantro sprigs.
Preparation
Step 1
1. Preheat oven to 350 degrees. Combine beef, crushed chips, soup mix, 1/2 c. taco sauce, 1 egg, and 1/2 tsp pepper. Press into bottom and up sides of 10" pie plate.
2. Heat rice according to pkg. directions. In bowl, combine rice, hominy, tomatoes, cheese, anaheim pepper, cilantro, and the remaining 1/4 c. taco sauce and egg. Spoon into meat shell. Place on baking sheet. Cover loosely with foil.
3. Bake 40 min. Remove foil, bake 20 min. longer or until thermometer registers 160 degrees F. Cool 15 min. Top with a few broken chips, jalapeno , and cilantro.
Wear plastic gloves while working with peppers.
