Ingredients
- 1 - 10.5 oz pkg frozen breaded chicken breasts
- 1 med green bell pepper, cut into thin strips
- 4 oz mushrooms, sliced
- 1 small onion, chopped
- 8 oz uncooked linguine
- 2 - 14.5 oz cans Italian seasoned diced tomatoes, undrained
- 1 garlic clove, pressed
- fresh grated Parmesan cheese
Preparation
Step 1
Partially thaw chicken patties and cut into 3/4" strips. Cook linguine according to pkg instructions; drain and keep warm. Lightly spray large skillet with olive oil. Add chicken and cook 5 minutes, turning frequently.
Add tomatoes, bell pepper, mushrooms, onion and garlic. Bring to a boil; cover. Reduce heat; simmer 8 to 10 minutes or until vegetables are tender. Serve over hot linguine. Sprinkle with Parmesan cheese, if desired.
