Ingredients

  • 1 pound elbow noodles (regular size)
  • 1/4 Cup butter
  • 1/4 Cup flour
  • 3 Cups Monterrey Jack (or Colby Jack)*

Preparation

Step 1

Cook pasta according to package directions.

In large saucepan, melt butter. Stir in flour making a roux. Gradually stir in half and half whisking until thickened. Stir in salt. Remove from heat. Add cheese, stir until cheese melts. Add noodles to sauce. Coat thoroughly. Put in a 9x13 baking pan and top with mild cheddar cheese*. Bake at 325/350 for 15 to 20 minutes.

Serves an army.

*For a milder taste use the cheese listed. For a sharper taste, we use a sharp white or yellow cheddar. Experiment with two cups of one cheese and one cup of another, such as Fontina or Gruyere.
