Vanilla Peach Jam

Ingredients
- made 3 half pint jars
- 3-4 large peaches- pitted and sliced (my peaches are from a local farmers market and are about 1 pound a piece)
- 1/2 cup sugar
- 1-2 Tablespoon vinegar or lemon juice. (add a bit and taste for balance and preference then add more)
- 1/3 vanilla bean scraped and chopped finely
- 1/4 tsp pectin

Preparation
Step 1
In a nonreactive glass bowl, macerate peaches with the sugar. (I use a fork and mash the peaches with the sugar.) Stir the vanilla bean into the peach and sugar mash and allow to sit while the peach juice gathers- about 30 minutes. Place mixture into a small saucepan and bring to a boil. Stir in the pectin and simmer until the jam thickens about 15 minutes.
Pour the jam into warmed jars. (The jars need to be warm so the hot jam doesn't shock the glass causing the jars to crack or break) Set them aside with their lids until cool and refrigerate.
