makes 10 very large muffins
Bake 350. About 20 min
- 2 c all bran
- 2 c shredded wheat, ( 4 biscuits ) crushed
- 1/2 c boiling water
- 1 c butter
- 2 1/2 c sugar
- 4 eggs
- 1/4 t salt
- 4 1/2 b soda
- 1/2 t b powder
- 1 qt buttermilk
- 5 c flour
Preparation time 10mins
Put the all bran and shredded wheat crushed, into a bowl. Add the boiling water and set aside.
In a large bowl, cream the rest of the ingredients.
Place in a well greased muffin tins.
Can keep batter in the refrig for a good month.
If you don't have buttermilk, you can make your own by adding about a T of vinegar to the milk and let set for a few min.
I ususally only make half a batch, as it makes about 18 muffins. Spray pan well.
