Quick and Easy Black-Eyed Pea Salad

Ingredients

  • Dressing:
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon sugar
  • Salad:
  • 1 cup quartered cherry tomatoes
  • 1 cup diagonally cut green onions
  • 1/2 cup finally chopped parsley
  • 1/2 teaspoon chopped freh mint
  • 1 (15.8 ounce) can Bush's Best Black-Eyed Peas, rinsed and
  • drained
  • 2 cloves garlic, minced

Preparation

Step 1

To prepare dressing, combine first 5 ingredients in a small bowl, stirring
with a whisk until well blended.

To prepare salad, combine tomatoes and remaining ingredients in a large
bowl. Drizzle dressing over salad; toss well. Cover and chill.
