Ingredients

  • 4

can - chili with no beans (12-15oz can)

  • 8

    oz - cream cheese (softened)

  • 2

packages - Fritos corn chips (generic works just fine)

  • 1

can - sliced green chilis, drained

  • 1

can - sweet corn, drained (or you can substitute frozen corn if you prefer)

  • 24

oz - shredded cheese (any kind is fine, I use a monterrey jack blend

  • Top with Sour cream

Directions

1 Preheat oven to 375°. 2 Blend together softened cream cheese, chili, drained corn, and drained green chili's. 3 Spray down a 9x13" casserole dish with nonstick spray. Layer corn chips on the bottom. 4 Spread the chili mix onto the corn chips, then add about half the cheese, then repeat: chips, chili mix, and cheese. 5 Cover in foil and bake for about 30mins. Remove foil and bake for another 10mins or so, or until cheese is bubbly. 6 We usually top of off with more chips (bc we like the extra crunch) and sour cream. You can add rotel and jalapenos to the chili mix, too, for an extra kick. Enjoy!
