Zucchini Bread Double Chocolate

Ingredients

  • 2 c grated zucchini
  • 1/2 c buttermilk
  • 1/2 c veg oil
  • 1 tsp vanilla
  • 2 large eggs
  • 1 1/4 c flour
  • 3/4 c sugar
  • 1/4 c cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 c chopped pecans
  • 1/2 c chocolate chunks

Step 1

Preheat oven to 350. Spray a 9x4 inch loaf pan with cooking spray. Wisk together the buttermilk, veg oil, vanilla, and eggs in a large measuring cup. Stir in zucchini. Combine the flour, sugar, cocoa, baking powder, baking soda, and salt in a med bowl. Stir the wet ing into dry ing just until incorporated, taking care not to over mix. Fold in 3/4 c on the nuts and all the choc chips. Pour batter into pans, scatter remaining 1/4 c nuts over top. Bake 55 to 1 hour. Cool 30 min and remove from pans
