Ingredients

  • 1 lb Ground Beef
  • 1/2 cup Diced Green Bell Peppers
  • 1 tsp Chili Powder
  • 1/2 tsp Oregano, Dried
  • 1/4 tsp Salt
  • 14 1/2 oz Diced Tomatoes
  • 1 tsp Minced Garlic
  • 16 oz Refried Beans W/ Green Chiles
  • 1/4 cup Onions, Green
  • 1 cup Mild Shredded Chedder Cheese
  • 6 tsp Sliced Mild Jalapeno Peppers
  • 6 oz sweet potato corn chips

Preparation

Step 1

Cook meat in a large nonstick skillet over medium-high heat until browned, stirring to crumble. Stir in the bell peppers and next 5 ingredients and cook for 8 minutes or until thick, stirring occasionally. Remove from pan.

Place pan coated with cooking spray over medium heat until hot. Add beans, and 2 tablespoons green onions cook 2 minutes or until thoroughly heated. Place 1 oz chips per serving on a large plate; spread warm bean mixture over center of plate. Spoon meat mixture over bean mixture; top with cheese.

Microwave until cheese melts. Remove; top with 1 tsp. sour cream, and 2 tsp. green onions. Top with 2 tsp. jalapeño pepper diced Serve immediately.
