Ingredients

  • 2 tablespoon extra virgin olive oil
  • 1-1/4 cup onion; chopped
  • 1 tablespoon garlic; chopped
  • 1 tablespoon dried oregano
  • 1-1/2 teaspoon fennel seeds
  • 2-1/2 cup crushed tomatoes; in own juice
  • 1 cup bottled clam juice
  • 1 cup chicken broth
  • 3/4 cup dry white wine
  • 1 pound shrimp; peeled, deveined
  • 1 package imitation crab
  • 1/4 cup fresh basil; chopped
  • salt and pepper

Preparation

Step 1

Heat olive oil in soup pot over medium heat. Add onion, garlic, oregano and
fennel seeds and saute until onion is tender, about 8 minutes. Add
tomatoes, clam juice, chicken stock, white wine. Increase heat and boil
until slightly thickened, about 15 minutes. Add seafood. Reduce heat and
simmer 2 minutes. Mix in fresh basil and simmer until shrimp are just
opaque in center, about 2 minutes longer. Season stew to taste with salt
and pepper.
