Ingredients
- 3 pounds yellow squash
- 3 carrots, grated
- 3 onions, sliced
- 1 cup sour cream
- 2 cans cream of chicken soup
- 1/2 pound margarine, melted
- 8 ounces seasoned bread stuffing mix
Preparation
Step 1
1. Cook sliced onion and squash in lightly salted water until just tender. Drain well.
2. Combine squash mixture, carrots, sour cream and soup.
3. Melt margarine and stir into the stuffing mix.
4. Line a 13x9x2" baking dish with 2/3 of the stuffing.
5. Carefully spoon squash mixture into the baking dish and top with the remaining stuffing.
6. Bake at 375* until browned and bubbly.
