Ingredients

  • 3/4 C raisins
  • ---
  • 1/4 C warm water
  • 1 tsp dark brown sugar
  • 1 T instant dry yeast
  • ---
  • 1/3 C dry milk
  • 1 C. hot tap water
  • 1/4 C soft butter
  • 2 T dark brown sugar
  • 1 tsp salt
  • ---
  • 1 1/2 tsp each: orange and lemon rind
  • 1/8 tsp each: ginger, cinnamon, mace
  • dash nutmeg
  • 1 large egg, beaten
  • 2 C flour
  • drained raisins

Cooking time 30mins

Preparation

Step 1

Soak raisins in hot water. Drain. Proof warm water, brown sugar and yeast.
Mix remaining ingredients except flour. Add to raised yeast mixure.
Gradually add flour and drained raisins. Knead. Let raise til double. Punch down and shape in 1 large or 2 medium loaves.
Place in sprayed bread pans til doubled.
Bake in preheated 350 degree oven.
