Cranberry applesauce

Ingredients
- 1/2 c plus 2 tbsp water
- 1/2 c plus 2 tbsp sugar
- 2.5 # golden delicious apples (about 4 large) peeled cored and cut into 1/2 inch dice
- 1 1/4 c cranberries
- 1 tsp finely grated ginger root
- 1/4 tsp cinnamon
- 1/2 tsp grated lemon zest

Preparation
Step 1
Combine water and sugar in lagre saucepan and place over high heat. Cook, stirring until sugar is dissolved. Add apples, cover and cook stirring frequently for 5 minutes. Add cranberries. Cover and cook until apples are soft and cranberries are popped (15-20 minutes).
Use potato masher r wooden spoon and mash mixture until chunky. Stir in ginger root, cinnamon and lemon zest. Cook uncovered 5 minutes longer. Cool, cover and refrigerate. Can be made 2-3 days ahead.
