Ingredients

  • 1/2

    c plus 2 tbsp water

  • 1/2

    c plus 2 tbsp sugar

  • 2.5

    # golden delicious apples (about 4 large) peeled cored and cut into 1/2 inch dice

  • 1 1/4

    c cranberries

  • 1

    tsp finely grated ginger root

  • 1/4

    tsp cinnamon

  • 1/2

    tsp grated lemon zest

Directions

Combine water and sugar in lagre saucepan and place over high heat. Cook, stirring until sugar is dissolved. Add apples, cover and cook stirring frequently for 5 minutes. Add cranberries. Cover and cook until apples are soft and cranberries are popped (15-20 minutes). Use potato masher r wooden spoon and mash mixture until chunky. Stir in ginger root, cinnamon and lemon zest. Cook uncovered 5 minutes longer. Cool, cover and refrigerate. Can be made 2-3 days ahead.
