Hawaiian Quesadillas

Ingredients

  • 4 flour tortillas (7 inch)
  • 2 teaspoons fat-free mayonnaise
  • 3 oz thinly sliced cooked ham, cut into strips
  • 1 can (8 oz) crushed pineapple, well drained
  • 1/2 cup chopped green bell pepper
  • 1/4 cup finely shredded mozzarella cheese (1 oz)

Directions

1In 12-inch nonstick skillet, place tortilla. Spread with 1 teaspoon of the mayonnaise. Top with half of the ham, pineapple, bell pepper and cheese. Top with second tortilla.
2Cook over medium heat 2 to 4 minutes, turning once, until lightly browned. Remove from skillet.
3Repeat to make second quesadilla.
