Strawberry Napoleons

ICING: Beat together 2 cups powdered sugar, about 2 tbsp. water and ¼ tsp. almond extract until smooth and spreadable.
Ingredients
- 1 pkg. (about 1 lb.) ready-made puff pastry
- 1 pkg. (3 1/8 oz.) vanilla pudding
- 1 c. milk
- 2 tsp. unflavored gelatin
- 1 1/2 tbsp. water
- 1 c. whipping cream, whipped
- 1/2 tsp. almond extract
- Icing
- 3/4 c. chopped walnuts or almonds
- strawberry slices
Preparation
Step 1
Thaw folded pastry for about 20 min. Carefully unfold. Cut each sheet into 12 rectangles. Place on ungreased baking sheet. Prick surface of pastry with fork. Bake at 350° for 18 to 20 min. until puffed and golden. Cool on racks. Prepare custard by cooking pudding according to package directions but use only 1 cup milk. Cover and chill. Meanwhile, in saucepan combine gelatin with water. Stir over low heat until dissolved. Cool. Beat gelatin into whipped cream. Stir in almond extract. Fold whipped cream mixture into pudding until well combined. Cover and chill. Prepare the icing. When ready to assemble, drizzle icing over half the rectangles. Spread custard over remaining pastries. Arrange some strawberries over custard. Top with iced rectangle. Sprinkle with nuts. Arrange strawberry halves on top. Chill 1 to 2 hours before serving.
