Vichyssoise

Ingredients

  • 1 package Knorr Leek Soup Mix
  • 2 1/2 cups water
  • 1 chicken bouillon cube dissolved
  • 1/2 cup instant mashed potatoes
  • 1 cup milk
  • 1 cup half and half
  • 1 bunch chives

Preparation

Step 1

Cook package of Knorr Leek Soup Mix in 2 1/2 cups water for 10 minutes.

Add 1 chicken bouillon cube dissolved in 1/2 cup boiling water.

Add 1 cup water and 1/2 cup instant mashed potatoes.

Stir until well blended.

Remove from heat, cool, and add 1 cup milk and 1 cup half and half.

Chill thoroughly; add chives on top to serve

* With excess leak, strain or put in a blender for 5 min.
** For a richer soup, use 1 pint half and half and omit the milk
