Shrimp with Peanut Sauce

Ingredients

  • 2 Tb. sliced green onions
  • 2 cloves garlic, minced
  • 3/4 c. chicken broth
  • 3 Tb. creamy peanut butter
  • 1 Tb. soy sauce
  • 1 Tb. lemon juice
  • 1 tsp. chili powder
  • 1 tsp. brown sugar
  • 1/2 tsp. ground ginger
  • 1 lb. unpeeled large fresh shrimp

Preparation

Step 1

Cook green onions and garlic in a skillet coated with cooking spray over medium heat, stirring constantly, about 3 minutes. Add chicken broth and next 6 ingredients, stirring until smooth. Reduce heat, and simmer 10 minutes, stirring often. Remove from heat; cool. Peel and devein shrimp, leaving tails attached. Place shrimp in sauce; turn to coat. Cover and refrigerate 1 hour. Remove from sauce; discard sauce. Thread shrimp onto skewers. Broil 6" from heat (with electric oven door partially opened) about 5 minutes on each side or until shrimp turn pink.
