Ingredients
- 4 c. grated potatoes (4 to 5 medium)
- 2 pkgs. (3 oz. each) cream cheese
- 2 eggs, separated
- 1 1/4 c. milk
- 3/4 tsp. salt
- 1/4 tsp. each cumin and cayenne
- 1/2 tsp. turmeric
- 1/2 c. minced ham, optional
- 3 tbsp. chopped onion
- 2 tbsp. minced parsley
- paprika
- 2 tbsp. butter or margarine
Preparation
Step 1
Grate potatoes and cover with cold water while preparing remaining ingredients. Beat cream cheese until smooth. Add egg yolks, blending well. Stir in milk, salt and spices until well mixed. Add ham, onion and parsley. Drain potatoes well. Combine them with the cream cheese mixture. Fold in stiffly beaten egg whites. Transfer to a buttered 1½-quart baking dish. Smooth top. Sprinkle with paprika. Dot with butter. Bake at 350° for 1 to 1¼ hrs. or until potatoes are tender and top is lightly browned.
