Roasted Pepper, Corn & Bean Salad

Ingredients

  • Dressing :
  • 15 ounce jar roasted red peppers,
  • drained and chopped
  • 2 ( 15 ounce ) cans of beans,
  • kidney, black, and-or garbanzo
  • 1 cup frozen corn, thawed
  • 4 ounce can green chiles,
  • drained and diced
  • 2 thinly sliced green onions
  • 2 Tablespoons cider or white vinegar
  • 2 Tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 1 clove minced garlic
  • 1/2 teaspoon cumin

Preparation

Step 1

Combine vegetables. Make dressing and pour over vegetables. Chill for an hour or more.
