Ingredients
- Dressing :
- 15 ounce jar roasted red peppers,
- drained and chopped
- 2 ( 15 ounce ) cans of beans,
- kidney, black, and-or garbanzo
- 1 cup frozen corn, thawed
- 4 ounce can green chiles,
- drained and diced
- 2 thinly sliced green onions
- 2 Tablespoons cider or white vinegar
- 2 Tablespoons lemon juice
- 1 teaspoon grated lemon zest
- 1 clove minced garlic
- 1/2 teaspoon cumin

Step 1
Combine vegetables. Make dressing and pour over vegetables. Chill for an hour or more.
