    (6-8 oz) salmon filets

  • 1

    lemon, cut in half

  • Part 1

  • 1/4

    c butter, melted

  • 3

    T Dijon mustard

  • 3

    T grain Dijon mustard

  • 3

    T honey

  • 1

    t Old Bay seasoning

  • Part 2

  • 1/4

    c chopped pecans

  • 1/4

    c plain bread crumbs

  • 3

    T butter, melted

  • 1

    T fresh thyme, chopped

  • Salt & white pepper to taste

Directions

Preheat oven to 400. In sm bowl mix ingredients from part 1 together & reserve. In sm bowl mix ingredients from part 2 together & reserve. Place salmon fillets skin side down on greased baking tray. Coat salmon with part 1 mixture. Then top with part 2 mixture. Place on center rack in oven & bake 12-15 min until it flakes easily with a fork. Squeeze lemon juice over top of each piece & serve. Goes well with rice pilaf & sautéed asparagus spears.
