Ingredients
- Salad:
- 1 head of organic romaine, chopped, washed, and spun
- 3/4 cup kalamata olives, halved
- 1/2 organic red onion, sliced thinly
- 1 organic English cucumber, chopped
- Dressing:
- 1/2 cup organic EVOO
- Juice and zest of one organic lemon
- 2 TB raw, organic apple cider vinegar
- 2 cloves garlic , pressed and 1/2 tsp Himalayan sea salt or Real salt {mash together to make a paste}
- 1 tsp organic oregano
- 4 kalamata olives, minced
Preparation
Step 1
In a mason jar, add dressing ingredients. Cover and shake before dressing.
In a large salad bowl, toss together vegetables and olives. Dress as desired.
Store leftover dressing in the fridge.
