Chicken, Clams, Mushrooms & Egg Noodles

Ingredients

  • 2 cloves finely chopped garlic
  • 4 finely sliced green onions
  • 4 Tablespoons butter
  • 2 cans minced clams, drained,
  • with liquid reserved
  • 1/2 pound sliced mushrooms
  • 1 Tablespoon butter
  • 1 1/2 bonelss skinless chicken breasts,
  • cooked and shredded or cubed
  • 1/2 cup chopped parsley
  • 1/2 cup grated Parmesan cheese
  • 1 pound wide egg noodles
  • ( preferably Amish made )

Preparation

Step 1

Saute garlic and onions in butter in a large pan at medium heat for about 1 minute. Add reserved clam juice, and season with salt and pepper. In a separate medium sized pan, saute mushrooms in butter, then combine with the onions mixture. Add the chicken and clams, and heat through. Stir in parsley and parmesan. Serve over noodles.
