Ingredients

  • l lb. yellow squash, sliced
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 2 T butter, melted
  • 1/4 cup Mayo
  • 1/2 cup shredded cheese
  • 1 1/2 t sugar
  • 1/4 t minced dried onion
  • 1 egg, beaten
  • Topping
  • 2 T butter
  • 1/4 cup Ritz crackers
  • 1/4 cup pecans

Preparation

Step 1

Put squash, water and salt in casserole. Cover and cook on high 8-10 minutes in microwave. Stir after 4-5 minutes. DRAIN WELL

Mix butter, mayo, cheese, sugar, dried onion and egg together. Pour over squash. Microwave on Medium 4 minutes. Stir after 2 minutes.

Topping
Melt butter on high 1 minute add crumbs and nuts. Microwave on high 2 minutes, stir after 1 minute. Add to squash and microwaveon Medium 2-4 minutes till set in middle. Let stand 5 minutes.
