Quick and Easy Oven Fries

For a special flavor use 1 tbsp. paprika or 2 tsp. cayenne pepper instead of the Italian seasoning in Step 2 and omit the Parmesan.

Ingredients
- 2 lb. baking potatoes
- 1/4 c. plus 1 tbsp. olive oil
- 2 cloves garlic, crushed
- 1 tbsp. Italian seasoning
- 1 tsp. salt
- 1 tsp. black pepper
- 2 tbsp. finely grated Parmesan cheese
Preparation
Step 1
Preheat oven to 400°. Scrub potatoes, then cut into even-size wedges to ensure uniform cooking. In a large bowl, mix olive oil, garlic, Italian seasoning, salt and pepper. Add potato wedges to bowl and mix well to coat. Spread potato wedges in a single layer on a large baking sheet. Bake for 20-25 min., depending on thickness of wedges, turning halfway through cooking time. Sprinkle Parmesan cheese over potatoes. Return to oven and bake until crisp and golden, about 10 min. longer. Serve hot.
