Shrimp & Artichoke Bake

Ingredients

  • Butter for greasing
  • 14 oz can quartered artichoke hearts rinsed, drained & patted dry
  • 5 lg eggs
  • 3/4 c milk
  • 1/2 t salt
  • 1/4 t pepper
  • 16 oz bag frozen peeled & deveined shrimp, thawed
  • 4 green onions, sliced
  • 1 c shredded Swiss cheese

Preparation

Step 1

Preheat oven to 350. Grease a 3 qt casserole dish with butter & set aside.

Place eggs, milk, salt & pepper in med bowl & whisk to combine. Add shrimp, artichokes & green onions, stirring to combine. Pour into prepared casserole dish & top with cheese.

Bake until top is bubbly & golden brown, about 45 min. Remove from heat & let cool 10 min before serving.

Serve with warm crusty bread & side salad.
