Baked Salmon with Tomatoes & Mushrooms

  • 4 (6 oz) salmon fillets
  • Juice of 1/2 lemon
  • 4 oz cream cheese, softened
  • 1/2 c tomatoes
  • 1/2 c mushrooms
  • 1/4 c fresh chives
  • 2 T fresh Italian parsley
  • Salt & pepper to taste



Step 1

Place salmon in shallow greased baking dish. Drizzle lemon juice over fish. Combine cream cheese with salt & pepper in sm bowl. Chop tomatoes, mushrooms, chives & parsley. Add to cream cheese mixture.

Top salmon to vegetable mixture. Bake uncovered in oven at 400 until fish flakes easily, 12-15 min. Garnish with fresh chives & lemon wedges if desired.
