Ingredients
- 4 ounces cream cheese
- 1/4 cup orange marmalade
- 1/3 cup chopped pecans
- 8 slices buttermilk bread
- 3/4 cup apricot preserves
- orange juice
- 4 eggs, beaten
- 1/4 cup heavy cream
- 1 tsp vanilla
- Dash of ground nutmeg
- Sliced bananas
- Orange slices and mint sprigs for garnish

Preparation
Step 1
Mix together cream cheese, orange marmalade, and chopped pecans. Spread equally on 4 slices of bread. Top with remaining slices to make 4 sandwiches.
To make the topping sauce, heat apricot preserves in small saucepan. Thin with orange juice to desired consistency.
Mix together eggs, cream, vanilla, and nutmeg and dip sandwiches into mixture. Cook in butter in frying pan over medium heat until browned on both sides.
Arrange on plate by slicing toasts diagonally and fan banana slices on top. Spoon warm sauce over toast. Garnish with orange slices and mint sprigs. Served well with Mini Souffles.
