Yukhoe – Tartare with a Twist | Happy Stomachs

Ingredients

  • 1 lbs best quality beef tenderloin or sirloin
  • 1 tbsp rice wine
  • 1 bunch spring onions, washed and cut into fine rings
  • 2 tsp freshly squeezed garlic juice
  • 2 tbsp sugar
  • 1 tsp freshly squeezed ginger juice
  • 2 tbsp sesame oil
  • 1 tbs toasted sesame seeds (white or black, or both)
  • salt to taste
  • freshly ground black pepper, to taste

Preparation

Step 1

(makes 4 appetizer or 2 main course servings)

In a large bowl, combine rice wine, spring onions, garlic juice, sugar, ginger juice, sesame oil, sesame seeds, salt and black pepper. Mix well.

Add the meat and, with your hands, massage the seasoning into your meta throughly and deeply. Cover with plastic wrap and let rest in the fridge at least two hours.
