Old-Fashioned Chicken Fricassee

A classic chicken stew with chicken breasts simmering in white wine and vegetables is sure to bring comfort to your table.

Ingredients

  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 (6-ounce) skinned chicken breast halves
  • 2 teaspoons butter
  • 1 1/2 cups chopped onion
  • 1/2 cup chopped celery
  • 3 garlic cloves, minced
  • 1 cup fat-free, lower-sodium chicken broth
  • 1/4 cup dry white wine
  • 2 cups (3-inch) julienne-cut carrot
  • 1/4 cup chopped fresh parsley

Preparation

Step 1

Combine first 5 ingredients in a large zip-top plastic bag. Add chicken; toss well to coat. Remove chicken from bag; reserve flour mixture. Melt butter in a large nonstick skillet over medium heat. Add chicken, breast sides down; sauté 5 minutes or until chicken is browned. Remove chicken from pan; keep warm.

Add onion, celery, and garlic to pan; sauté 5 minutes, stirring occasionally. Stir in reserved flour mixture; cook 1 minute. Add broth and wine; bring to a boil. Add carrot. Return chicken to pan, breast sides up. Cover, reduce heat, and simmer 25 minutes or until chicken is done. Sprinkle with the chopped parsley.

It was excellent. The chicken was very moist. Only modification is that the wine/stock combination was a little dry, so I had to add some water to it, and I put it in a small pot rather than a skillet so that the liquid can cover all the chicken. Served it over couscous with almonds and raisins, and it was fantastic! Thanks for the recipe!

Chicken came out incredibly moist and flavorful. I didn't have any white wine and my celery had gone bad so I can only imagine that this dish would be even better with ALL the ingredients. The carrots came out delicious as well.

This recipe was very easy to follow and the result was delicious! Very flavorful and moist chicken that my young son loved. I served this with some roasted potatoes for my husband and son and I had this dish and a side salad. Was very filling!

Really delicious comfort food. I would recommend slightly seasoning the raw chicken before dredging it in the flour.
