Ingredients
- Crust:
- 2 1/2 cups Oreo Baking Crumbs
- 1/2 cup melted butter or margerine
- Filling:
- 3 cups milk
- 3 pkgs. (113g)vanilla instant pudding
- 4 cups thawed frozen whipped topping
- 1 pkg.(200g) Mr. Christie's Chocolate Wafers
- Topping:
- 4 cups sliced strawberries, divided
- 2/3 cup sugar
- 3 tbsp. cornstarch
- 3/4 cup water
- 1 tbsp. lemon juice
- 5 - 10 drops red food coloring, optional
Preparation
Step 1
Crust:
Combine baking crumbs and butter and press into a 13 x 9 inch bakilng pan.
Fillling:
In large bowl, whisk together milk and vanilla instant
pudding until thick and smooth. With spatula fold in topping. Spread half the pudding mixture on crust. Place Mr. Christie's Chocolate Wafers on filling to cover, overlapping if necessary. Spread remaining fillling over wafers. Refrigerate at least 2 hours or up to 1 day.
Topping:
Puree or mash 1 cup strawberries in food processor or by hand. Combine sugar and cornstarch in a medium saucepan. Gradually stir in water, mashed strawberries, lemon juice and food coloring(optional). Stirring constantly, bring to boil over medium heat and boil 1 minute. Let mixture cool slightly. Gently stir remaining 3 cups sliced strawberries into cooled fillling. Spoon onto filling just before serving.
